Roast Duck Recipe
Recipe for Roast Duck with an Orange Apple stuffing and apple cider glace.
Poland is famous for its roast duck and geese. Here is a wonderful and easy recipe for a stuffed roast duck. The duck used in this recipe is a domestic duck and not a wild duck.
Stuff the duck with a mixture of a couple peeled and sliced oranges, apples and some raisins.
Place in the oven at about 180 degrees Centigrade for about an hour. The time will depend on the size of the duck and how well thawed it is.
There is a temperature conversion chart at Convert Oven Temperatures – Fahrenheit and Celcius
If you use convection, it will take less time.It is always best to use a meat thermometer to cook for the proper time.
During the last 15 minutes baste with Apple Orange Glace.
A domestic duck is fatty so you will have enough drippings in the roasting pan to make a nice gravy. Add some water from boiled vegetables, or if you have none, some water. Then put a two tablespoons of flour in a jar with water and shake it until it is smooth.
Heat the water drippings mixture until it boils. Add the flour paste slowly while you stir. Add until the gravy is as thick as you want.
