There are different kinds of pierogi dough. The traditional family dinner pierogi is made with regular refined flour.

Others are made with a spinach base or whole wheat flour.

Pierogi dough is typical of the doughs used all of the world for boiled dumplings.

And it is also similar to a pasta dough.

In all, it is very simple to make and takes very little time to make. You can make it and store it in the refrigerator for a couple days. And you can make a large dough, cut it in parts and freeze some of it.

When you take it out of the freezer, just let it thaw naturally and it will roll out very well for you.

The recipe used in this video,

300 grams flour
2 egg yolks
1/2 teaspoon salt
2 teaspoons oil
About 3/4 to 1 cup water

makes a very tender dough that is perfect for sweet pierogi.

And it is great for savory pierogi as well.

To make it:

Add everything to a bowl and mix the mass to a smooth though. It will be rather moist. That is okay because when you will work it you will flour the board on which you roll it out and you will put flourr atop it so that your rolling pin does not stick to it.

Put the dough in a plastic bag and put it in the refrigerator to rest about one half hour or more.

You do not have to use the dough immediately and you can allow it to stay in the refrigerator for a couple days. You can go back to it and cut small pieces off the dough and make a few pierogi at a time as you wish.

To make a whole-wheat dough, just substitute whole-wheat flour for the regular flour. For the spinach dough you will have to add some spinach to the mix. Both of these are covered in separate pages that you can find in the site map below.
