Cranberry Sauce With Walnuts
This is a recipe for cranberry sauce with walnuts.
There is a difference between the cranberries that you get in Poland and those that you get in the US. Those in Poland do not gel like their US cousins. So you must add some pectin if you want a jelly rather than a sauce.
Ingredients:
2 cups cranberries
1/2 cup apple juice
1/4 cup orange juice
1/2 cup sugar
1 teaspoon grated orange rind
1/2 cup walnuts, chopped
A few large pieces of walnut for garnish (optional)
Put cranberries, apple juice, orange juice and sugar in a pot and simmer until the berries pop. That will take five to ten minutes depending on the berries. You will have to continuously stir the mixture to prevent burning.
You can make it easier by heating the mix in a microwave.
Then add walnuts and orange rind.
It is a little tart. So adjust with added sugar if you wish.
You might even add some fresh, diced orange.
Some berries do not jell well. So you might want to add a little pectin.
Add to a serving bowl and chill.
Garnish with walnuts and or orange slices.
