Italian Recipe Pasta And Broccoli
A recipe for Italian food lovers – broccoli and pasta.
A nice way to mix pasta with a vegetable for a nutritious dish that also looks nice when served.
The dish is pasta to which you add cooked broccoli, mix after which you add an olive oil based dressing.
The most difficult part about this recipe is preparing the broccoli and not overcooking it.
Mince 2 large garlic cloves and saute, until it starts to turn golden, in about two tablespoons of olive oil. Add 4 tablespoons of wine vinegar packed capers and saute about two more minutes. Then add 3/4 cup olive oil, 3/4 teaspoon dried red pepper flakes. Season to taste with salt an pepper. Warm the dressing.
Boil or steam the broccoli to the point that it still has a bit of a crunch to it. Your choice. In any case, don’t cook it to the point where it turns to mush when you mix it in the pasta.
This is enough for a bit more than 1/2 kilogram of pasta.
Use a bit of feta cheese, some parsley, or anything that fits your table setting.
